I’m a geek who likes my food.  As is requisite for a long weekend, friends came over and food was had.  And since the food in question ended up being bbq pulled chicken sandwiches I needed a good side dish to go with it.  Being that I don’t particularly care for cabbage and my guy doesn’t really like mayonaise, I wanted to come up with something different and tasty.  Enter Apple Fennel Slaw.  No recipe on the web was quite right, so I got a bit handy and here’s what I ended up with:

Apple Fennel Slaw

1 bulb fennel root

1 large Granny Smith apple

1/2 bunch of chives

1 lemon

1 1/2 tablespoons apple cider vinegar

1 teaspoon dijon mustard

4 Tablespoons grapeseed oil

salt and pepper to taste

Get to work with the fennel bulb and a mandolin slicing it up nice and thin. Core the apple and cut up into matchsticks.  Squeeze one half lemon over and toss.  Mince chives and toss in.

In a separate cup, mix juice of the other half lemon, vinegar and mustard.  After those ingredients are well mixed, stir in grapeseed oil.  Pour over slaw, toss well and put in refrigerator to rest for 45-60 minutes to allow flavors to combine.  Then serve and eat!
